Ingredients

1 box (3.9 ounce) Instant chocolate pudding mix

1¼ cups Cold soy milk

1 package (14 ounce) Silken tofu

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Pour the instant chocolate pudding mix and cold soy milk into a blender. Blend on medium speed for about 15 seconds until the mixture becomes very smooth and evenly combined.

  3. Open the package of silken tofu and add it to the blender with the pudding mixture.

  4. Blend the mixture, then pause and use a spatula to scrape down the sides and bottom of the blender to ensure all ingredients are incorporated and blended smoothly.

  5. Continue blending and scraping as needed until the mousse is completely smooth and homogeneous with no lumps or streaks.

  6. Divide the chocolate mousse evenly among 4 small serving dishes or bowls.

  7. Cover the dishes and place them in the refrigerator.

  8. Chill for at least 2 hours before serving. The mousse will firm up as it cools and develop its full texture and flavor.

This mousse is genuinely quick—the stated 130 minutes is padding for chilling time, but active prep is under five minutes, which is honest enough for weeknight dessert. Chocolate pudding mix and soy milk are easy finds at any Charlotte chain, though silken tofu requires a trip to Harris Teeter, Food Lion, or Kroger's specialty aisle; it's not a ALDI or Walmart staple. At roughly $1–1.50 per serving, it's cheap and scales perfectly for a family. The mousse reheats poorly (texture breaks when warmed), so plan this for same-night serving or cold leftovers only.
