Ingredients

2½ cups mulberries, rinsed

1½ cups granulated sugar

3 tablespoons water

Directions

  1. Combine the rinsed mulberries, granulated sugar, and water in a large pot or heavy-bottomed saucepan.

  2. Bring the mixture to a boil over medium-high heat, stirring frequently to ensure the sugar dissolves and the fruit releases its juices.

  3. Once boiling, reduce the heat to medium and maintain a gentle rolling boil for 15 to 18 minutes, stirring occasionally to prevent sticking.

  4. To test for doneness, place a small spoon of jam on a chilled plate; it should wrinkle slightly when pushed with your finger, indicating the pectin has set.

  5. Remove from heat and skim away any foam that has risen to the surface.

  6. Let the jam cool for 5 minutes before transferring to sterilized jars. Store in the refrigerator for up to 3 weeks, or freeze for longer storage.
