Ingredients
Vegetable cooking spray
3 medium Potatoes, medium
2 teaspoons Vegetable oil
½ teaspoon Fresh rosemary, dried
½ teaspoon Salt
Directions
Preheat your oven to 450°F and lightly coat a large baking sheet with vegetable cooking spray.
Wash the potatoes thoroughly under cool running water and peel them. Cut the potatoes into uniform 1/2-inch cubes and transfer them to a large mixing bowl.
In a small bowl, whisk together the vegetable oil, dried rosemary, and salt until well combined.
Pour the oil and herb mixture over the potato cubes and toss until all pieces are evenly coated with the seasoning.
Spread the seasoned potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25 to 30 minutes, until the potatoes are golden brown and fork-tender. Stir occasionally for even cooking.
