Ingredients

1/2 pound breakfast sausage

1/2 cup unsalted butter

1/2 cup all-purpose flour

6 cups whole milk

1/2 teaspoon crushed red pepper flakes

Kosher salt to taste

Freshly ground black pepper to taste

Directions

  1. Heat a medium skillet over medium heat. Add the breakfast sausage and cook, breaking it into small pieces with the back of a spoon, until browned and cooked through, about 5 minutes. Transfer the cooked sausage to a paper towel-lined plate to drain excess fat.

  2. In a large saucepan, melt the butter over medium heat. Add the flour and stir continuously until the mixture turns a pale yellow color, about 2 minutes.

  3. Gradually whisk in the whole milk, stirring constantly to avoid lumps. Bring the mixture to a boil while whisking constantly.

  4. Reduce heat to medium and continue whisking until the gravy thickens, about 10 minutes.

  5. Stir in the drained cooked sausage and red pepper flakes. Season to taste with kosher salt and freshly ground black pepper.

  6. Serve warm. The gravy can be made ahead, cooled completely, covered, and refrigerated for up to 1 day. Reheat gently over medium-low heat, stirring occasionally, before serving.
