Prosciutto-Wrapped Salmon

Ingredients
6 center-cut salmon fillets (6 ounces each), skinned and halved crosswise
12 very thin slices prosciutto
2 tablespoons extra-virgin olive oil
Salt to taste
Freshly ground black pepper to taste
Directions
Preheat your oven to 425°F.
Lightly season each salmon piece with salt. Wrap each salmon piece snugly with one slice of prosciutto, keeping the ends of the salmon exposed.
Brush a large shallow baking pan lightly with olive oil. Arrange the wrapped salmon pieces seam-side down in the prepared pan.
Season the salmon with freshly ground black pepper. Drizzle each piece with approximately 1/2 teaspoon of extra-virgin olive oil.
Place the baking pan in the middle of the preheated oven and bake for 8 to 9 minutes, until the salmon is just cooked through and reaches an internal temperature of 145°F.
Remove from the oven and serve immediately.
