Ingredients
3 slices Prosciutto, thinly sliced
2 ounces Feta cheese
Fresh sage, mint, basil, or oregano leaves (optional)
⅓ cup Extra-virgin olive oil
Directions
Using a sharp knife, cut each slice of prosciutto into rectangular strips measuring approximately 1 inch by 2 inches (3 cm by 5 cm).
Cut the feta cheese into thin rod-shaped pieces (bâtons) that match the width of the prosciutto strips.
If using fresh herbs, slice a few leaves very thinly.
Place a feta rod along the narrowest edge of a prosciutto rectangle, add a small amount of sliced fresh herb if desired, then tightly roll the prosciutto around the feta, pressing gently to ensure it holds together securely.
Transfer the completed roll to a serving dish. Repeat the rolling process with the remaining prosciutto and feta until all ingredients are used.
Pour the extra-virgin olive oil over all the rolls, making sure they are well coated and nearly submerged in the oil.
Serve immediately at room temperature, or cover and refrigerate until ready to serve. If refrigerated, allow the rolls to come to room temperature before serving.
