Ingredients
2 cups all-purpose flour
1 cup sugar
1 tbsp. honey
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. ground allspice
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
2 tsp. baking powder
1/2 tsp. sea salt
4 tbsp. plant-based milk
2 tbsp. vegetable oil
1 lemon, thinly sliced on a mandoline
1 orange, thinly sliced on a mandoline
2 tbsp. chopped dried apricot
2 tbsp. chopped dried cherries
1 tbsp. chopped dried cranberries
Directions
Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
Slice lemon and orange thinly on a mandoline, then chop the citrus slices into small pieces; set aside.
In a small bowl, combine flour, baking powder, salt, cinnamon, cloves, allspice, ginger, and nutmeg; whisk together and set aside.
In a large bowl, mix sugar and honey until well combined.
Add plant-based milk and vegetable oil to the sugar-honey mixture; stir until incorporated.
Add the dry ingredient mixture to the wet ingredients and stir until a thick dough forms.
Fold the chopped lemon, orange, dried apricots, dried cherries, and dried cranberries into the dough until evenly distributed.
Scoop dough by rounded tablespoons onto prepared baking sheets, spacing cookies about 2 inches apart.
Bake for 10-12 minutes, until the edges are lightly golden and cookies are set but still soft in the center.
Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
