Ingredients

1¾ cups almond flour

¼ cup coconut flour

¼ teaspoon cinnamon

⅛ teaspoon ground ginger

1 pinch Celtic sea salt

1 cup grass-fed unsalted butter, softened

1 cup coconut milk

½ cup coconut sugar

2 teaspoons molasses

½ teaspoon vanilla

¼ cup cold brewed coffee concentrate

1 cup paleo eggnog

Directions

  1. Preheat your oven to 350°F for the shortbread.

  2. In a stand mixer or using a hand mixer, cream the softened butter on medium speed for 3–5 minutes until light and fluffy, scraping down the bowl as needed.

  3. While the butter creams, whisk together the almond flour, coconut flour, cinnamon, ground ginger, and sea salt in a separate bowl.

  4. Gradually add the dry flour mixture to the creamed butter, mixing on low to medium speed until just combined and no dry streaks remain.

  5. Press the shortbread dough evenly into a 9×9-inch baking pan.

  6. Bake for 25–30 minutes, until the shortbread is set and lightly golden at the edges. A toothpick inserted in the center should come out clean.

  7. Remove the shortbread from the oven and let cool to room temperature in the pan, about 15–20 minutes. Once cooled, cut into 18 squares.

  8. To prepare a latte, combine 1 cup coconut milk, 2 tablespoons coconut sugar, ¼ teaspoon cinnamon, a pinch of ginger, ¼ teaspoon molasses, ⅛ teaspoon vanilla, and either ¼ cup cold brew coffee concentrate (for coffee latte) or ¼ cup paleo eggnog (for eggnog latte) in a medium saucepan.

  9. Whisk the latte mixture to combine evenly and heat over medium-low heat, stirring occasionally, until it begins to bubble gently around the edges. Do not boil.

  10. Pour the latte into a coffee mug. If desired, froth the latte with a beverage frother for a creamier texture, then serve with a piece of paleo shortbread.
