Ingredients
2 large potatoes, peeled and diced
1/3 cup fat-free milk
1/2 pound 85% lean ground turkey
2 tablespoons all-purpose flour
1 package (10 ounces) frozen mixed vegetables
1 can (14.5 ounces) low-sodium vegetable broth
Shredded cheese for topping (optional)
Directions
Wash your hands thoroughly with soap and warm water before beginning preparation.
Peel and dice the potatoes into bite-sized cubes. Place them in a large saucepan and cover completely with cold water.
Bring the water to a rolling boil over high heat, then reduce heat to medium-low and simmer for 12-15 minutes until potatoes are very tender and easily pierced with a fork.
Drain the potatoes thoroughly in a colander. Return them to the saucepan and pour in the fat-free milk. Mash until smooth and creamy. Set aside.
Preheat your oven to 375°F (190°C).
Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until no pink remains and it reaches an internal temperature of 165°F (74°C), about 6-8 minutes.
Sprinkle the flour over the cooked turkey and stir constantly for 1 minute to coat evenly and allow the flour to cook.
Add the frozen mixed vegetables and the low-sodium vegetable broth to the skillet. Stir well to combine.
Bring the mixture to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until slightly thickened.
Transfer the turkey and vegetable mixture into an 8-inch square baking dish, spreading it evenly.
Spoon the mashed potatoes over the top of the meat mixture and spread them in an even layer, reaching the edges of the dish.
Bake uncovered for 25 minutes until the potato topping is lightly golden and the filling is heated through.
Remove from oven and let cool for 2-3 minutes. If desired, sprinkle shredded cheese over the top. Serve hot.
