Ingredients
8 ounces fresh button or cremini mushrooms, stems removed and sliced
2 tablespoons extra-virgin olive oil, divided
2 boneless, skinless chicken breasts
Salt and pepper, to taste
½ cup sweet Marsala wine
3 garlic cloves, minced
½ cup heavy cream
½ cup chicken broth
2 tablespoons unsalted butter
Directions
Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once shimmering, carefully place the chicken breasts in the pan. Sear for 5–6 minutes on each side until golden brown and the internal temperature reaches 165°F. Remove the chicken to a clean plate and set aside.
Add the remaining 1 tablespoon of olive oil to the same skillet. Stir in the sliced mushrooms and cook over medium-high heat for 3–4 minutes until they begin to soften and release their liquid. Season lightly with salt and pepper.
Add the minced garlic to the mushrooms and cook for 30 seconds, stirring constantly, until fragrant.
Pour in the Marsala wine, scraping the bottom of the pan to release any browned bits. Simmer for 2–3 minutes to slightly reduce the wine and cook off some of the alcohol.
Add the chicken broth and heavy cream to the skillet, stirring to combine. Simmer for 2 minutes to allow the sauce to thicken slightly.
Whisk in the butter until fully incorporated and the sauce becomes silky and rich.
Return the chicken breasts to the skillet, nestling them into the sauce. Simmer for 1–2 minutes to heat through and allow the flavors to meld.
Taste the sauce and adjust seasoning with additional salt and pepper as needed. Serve the chicken breasts topped with the mushroom-Marsala sauce.
