Ingredients
1 pound lean ground beef (90% lean)
1 large yellow onion, chopped
1/4 cup packed brown sugar
1/2 cup ketchup
2 tablespoons apple cider vinegar
1/2 teaspoon black pepper
2 cans (15.5 ounces each) low-sodium kidney beans, drained and rinsed
1 can (15 ounces) pork and beans in tomato sauce
2 cans (15.5 ounces each) low-sodium great northern beans, drained and rinsed
Directions
Preheat your oven to 350°F and wash your hands thoroughly with soap and warm water.
In a large skillet over medium-high heat, cook the ground beef with the chopped onion, breaking the meat apart as it browns, until the beef is no longer pink and reaches an internal temperature of 160°F, about 8 to 10 minutes.
Carefully pour off and discard any excess fat from the skillet, leaving just a thin coating for flavor.
Reduce heat to medium and stir in the brown sugar, ketchup, vinegar, and black pepper until well combined, stirring for about 1 minute until the sugar begins to dissolve.
Add the drained kidney beans, pork and beans (with sauce), and the drained great northern beans to the skillet, stirring gently until all ingredients are evenly distributed.
Transfer the entire mixture to a 9 by 13-inch casserole dish or similar-sized baking vessel.
Place the casserole in the preheated oven and bake uncovered for 30 minutes until the mixture is hot throughout and bubbling around the edges.
Remove from the oven and let rest for 5 minutes before serving.
