10 slices White bread slices
1 lb Freshwater shrimp, pre-cooked
8 oz Cream cheese, whipped
1 Small avocado
½ tablespoon Lemon juice
4 tablespoons Mayonnaise
¼ teaspoon Salt
3 Hard-boiled eggs
Fresh curly parsley
Fresh chives
Cherry tomatoes
pinch Freshly ground black pepper
Directions
Remove crusts from all 10 bread slices with a sharp knife, trimming each slice into a uniform square shape.
Add pre-cooked shrimp, 2 tablespoons mayonnaise, ⅛ teaspoon salt, and freshly ground black pepper to a food processor. Pulse until smooth and fully combined, creating a uniform shrimp paste. Set aside.
Cut the hard-boiled eggs into thin, even slices. Set aside on a plate.
Gently mash the small avocado in a bowl with a fork, leaving some small pieces for texture. Fold in ½ tablespoon lemon juice, ⅛ teaspoon salt, and a pinch of freshly ground black pepper. Set aside.
Begin assembly: place two bread squares side by side. Spread half of the shrimp paste evenly across both slices.
Place two fresh bread squares directly on top of the shrimp paste layer. Spread the seasoned avocado mixture evenly across both slices.
Place two more bread squares on top of the avocado layer. Spread the remaining 2 tablespoons mayonnaise evenly across both slices.
Arrange the egg slices in a single, overlapping layer across both bread squares.
Place two more bread squares on top of the egg layer. Spread the remaining shrimp paste evenly across both slices.
Top with the final two bread squares. Ensure that the seams and cuts of each bread layer are offset from one another so the tower does not split along a single line.
Wrap the entire sandwich tower tightly in plastic wrap, ensuring it is straight and compact. Refrigerate for 2 hours to allow the layers to set and bond.
Remove from refrigerator, unwrap carefully, and spread the whipped cream cheese evenly across the top and sides of the tower.
Garnish the top with fresh curly parsley, chopped fresh chives, and halved cherry tomatoes. Serve chilled.
