5 ripe avocados

½ cup fresh cilantro, chopped

2 green onions, chopped

2 tsp minced jalapeño pepper

1 tbsp chopped jalapeños

1 fresh lime juice

1½ cup shredded Monterey Jack cheese

2 tsp olive oil

½ cup salsa

Directions

  1. Preheat your oven to 450°F.

  2. In a small baking dish, sprinkle an even layer of ¾ cup of the shredded Monterey Jack cheese across the bottom.

  3. Pour the salsa evenly over the cheese layer.

  4. Top with the remaining ¾ cup of shredded cheese.

  5. Sprinkle the chopped jalapeños and fresh cilantro over the top.

  6. Place in the preheated oven and bake for 3 to 5 minutes, until the cheese is completely melted and bubbling at the edges. Watch carefully to avoid burning.

  7. Remove the dip from the oven and garnish with fresh cilantro if desired. Keep warm for serving.
