Ingredients

1 large onion, chopped

1 lb. ground beef

1 (15-oz.) can fire-roasted tomatoes

1 (15-oz.) can black beans, drained and rinsed

1 tbsp. taco seasoning

2 c. shredded cheddar cheese

8 small flour tortillas

Salt to taste

Directions

  1. Heat a large skillet over medium-high heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 6 minutes.

  2. Add the ground beef to the skillet and cook, breaking it apart with a spoon, until the meat is browned and no longer pink inside, 5 to 7 minutes. Make sure the internal temperature reaches 160°F.

  3. Stir in the fire-roasted tomatoes with their juices, drained black beans, and taco seasoning. Mix well and season with salt to taste. Simmer for 2 to 3 minutes to allow flavors to blend.

  4. Remove the skillet from heat and sprinkle the shredded cheddar cheese over the beef mixture. Stir continuously until the cheese is completely melted and evenly distributed throughout.

  5. Warm the flour tortillas in a dry skillet or directly over a gas flame for a few seconds on each side until pliable.

  6. Spoon the cheesy beef mixture evenly into each warm tortilla and fold in half. Transfer to serving plates and serve hot with desired toppings such as sour cream and green onions.
