Pork Souvlaki with Tzatziki

Ingredients
1 1/4 pounds pork shoulder, trimmed and cut into 3-by-1/2-inch strips
1 large onion, cut through the root end into 1/2-inch wedges
1/4 cup extra-virgin olive oil, divided
2 tablespoons extra-virgin olive oil, divided
3 tablespoons fresh lemon juice
2 tablespoons chopped fresh oregano
2 garlic cloves, mashed to a paste
Kosher salt and freshly ground black pepper to taste
1 cup Greek-style whole-milk yogurt
1/2 European cucumber, seeded and finely diced
2 tablespoons chopped fresh mint
Warm pita bread for serving
Lemon wedges for serving
Directions
In a medium bowl, combine 1/4 cup olive oil, lemon juice, oregano, garlic paste, and a pinch each of salt and pepper. Add the pork strips and toss until evenly coated. Let marinate at room temperature for 15 minutes while preparing remaining ingredients.
In a small bowl, stir together the Greek yogurt, diced cucumber, fresh mint, and a large pinch of salt until well combined. Taste and adjust seasoning. Set the tzatziki aside.
Heat a large skillet or grill pan over medium-high heat until very hot. Lightly brush onion wedges with the remaining 2 tablespoons of olive oil and season with salt and pepper.
Working in batches if needed to avoid crowding, place marinated pork strips on the hot surface and cook for 3 to 4 minutes per side, until golden brown and cooked through (internal temperature should reach 145F). Transfer cooked pork to a clean plate.
In the same skillet, arrange onion wedges in a single layer and cook for 4 to 5 minutes per side, until they are charred and tender.
Return the pork to the skillet with the onions and toss gently to warm through and combine, about 1 minute. Taste and adjust seasoning if needed.
Arrange the pork and onions on a serving platter. Spoon the tzatziki into a serving bowl and place lemon wedges alongside. Serve immediately with warm pita bread on the side.
