Ingredients

2 whole steaks T-bone steaks, 1 1/2 inches thick

Kosher salt

Freshly ground black pepper

Directions

  1. Remove the steaks from refrigeration 30-40 minutes before grilling to allow them to come to room temperature, which ensures even cooking throughout.

  2. Pat the steaks completely dry with paper towels. Moisture on the surface will prevent proper browning.

  3. Season both sides of each steak generously with kosher salt and freshly ground black pepper just before grilling.

  4. Preheat your grill to high heat (about 450-500°F) for 10-15 minutes with the grates clean and well-oiled.

  5. Place the steaks on the hot grill and sear without moving them for 4-5 minutes to develop a flavorful crust on the first side.

  6. Flip the steaks once and cook for another 4-5 minutes on the second side for medium-rare, or until the internal temperature reaches 145°F when measured with a meat thermometer inserted into the thickest part of the meat, away from the bone.

  7. Transfer the grilled steaks to a cutting board and let them rest for 5 minutes. This allows the juices to redistribute throughout the meat.
