Ingredients

2 apples, chopped

1 pound butter

3 stalks celery, chopped

2 pounds chicken thighs

2 cans creamed corn

1 onion, chopped

1/4 cup sriracha sauce

2 packages Stove Top stuffing mix

Vegetable oil for coating pan

Directions

  1. Preheat your oven to 450°F.

  2. Place the chicken thighs on a cutting board and pound them out with a meat mallet until they are thin and even throughout.

  3. In a large mixing bowl, combine the dry Stove Top stuffing mix with the chopped apples, onion, celery, and both cans of creamed corn. Mix well until all ingredients are evenly distributed. Set this mixture aside.

  4. In a small saucepan, combine the sriracha sauce and butter over low heat. Stir constantly until the sauce becomes smooth and glossy enough to coat the back of a spoon, about 5-7 minutes. Remove from heat and let cool slightly.

  5. Lightly coat a large deep baking pan with vegetable oil. Begin layering the dish by spreading a layer of the stuffing mixture on the bottom, followed by a drizzle of sriracha-butter sauce. Place pounded chicken thighs on top, then drizzle with more sauce.

  6. Continue alternating layers of stuffing mixture, sauce, and chicken until the pan is filled, ending with a top layer of stuffing mixture. Drizzle the remaining sriracha-butter sauce over the top.

  7. Bake in the preheated 450°F oven for 30-45 minutes, until the sauce is bubbling around the edges and the top is golden. The chicken should reach an internal temperature of 165°F.

  8. Remove from the oven and let rest for 5 minutes before serving.
