3 pounds bone-in chicken thighs and drumsticks (or combination)

Directions

  5. Return the chicken to the pot. Add the water, soy sauce, cane vinegar, oyster sauce, bay leaves, and whole black peppercorns. Stir well to combine.

  6. Bring the mixture to a simmer, then reduce heat to medium-low. Cover and simmer for 30–35 minutes, or until the chicken is very tender and reaches an internal temperature of 165°F, stirring occasionally.
