Ingredients

7 oz firm tofu, drained and cut into cubes

1/3 cup balsamic vinaigrette dressing

4 oz soba noodles

1 medium carrot, julienned

1/2 medium zucchini, julienned

3/4 cup shelled edamame, cooked

3 tsp minced fresh ginger

1 Tbsp hoisin sauce

1/2 Tbsp reduced sodium soy sauce

1/2 tsp sesame oil

1/2 tsp Sriracha hot sauce

2 tsp olive oil

Toasted sesame seeds for garnish

Directions

  1. Cut the drained tofu into cubes and place in a bowl. Pour the 1/3 cup balsamic vinaigrette dressing over the tofu and stir gently to coat. Cover the bowl and refrigerate for 15 to 20 minutes to allow the tofu to absorb the flavors.

  2. While the tofu marinates, cook the soba noodles according to package directions. Drain the cooked noodles, rinse under cold water, and set aside.

  3. Prepare the vegetables: Using a julienne peeler or knife, cut the carrot and zucchini into thin, matchstick-shaped pieces. Set aside with the already-cooked edamame.

  4. Make the sauce by combining the 2 remaining teaspoons of minced ginger, hoisin sauce, Sriracha hot sauce, sesame oil, reduced sodium soy sauce, and the balsamic vinaigrette. Whisk until well blended and set aside.

  5. Heat 2 teaspoons of olive oil in a medium skillet over medium-high heat. Add the minced garlic and cook for 15 to 30 seconds until fragrant.

  6. Add the marinated tofu to the skillet, discarding the marinade liquid. Sauté the tofu for 3 to 5 minutes, stirring occasionally, until it is heated through. Transfer to a plate.

  7. In a large bowl, combine the cooled soba noodles, julienned carrot, julienned zucchini, edamame, and the warm tofu. Pour the prepared sauce over the mixture and gently toss until all ingredients are evenly coated.

  8. Divide the noodle bowl among serving plates and garnish generously with toasted sesame seeds before serving.
