Ingredients

1 lb beef top sirloin steak, boneless, cut into 1¼-inch cubes

¼ cup fresh orange juice

¼ cup fresh lime juice

3 tbsp fresh oregano, finely chopped

3 tbsp olive oil

2 tbsp fresh parsley, finely chopped

1 tsp ground cumin

1 tsp garlic, minced

¾ tsp salt

1 tsp coarse ground black pepper

1 large lime, cut into wedges

1 small red onion, cut into thin wedges

10 oz grape or cherry tomatoes

Directions

  1. In a small bowl, whisk together orange juice, lime juice, oregano, olive oil, parsley, cumin, minced garlic, and salt. Reserve about 2 tablespoons of the mojo sauce for drizzling after grilling; set both portions aside.

  2. Cut the beef sirloin steak into 1¼-inch pieces and season evenly with black pepper.

  3. Thread four 12-inch metal skewers by alternating beef cubes with lime wedges and red onion wedges, distributing them evenly along each skewer. On four additional 12-inch metal skewers, thread the cherry or grape tomatoes, dividing them evenly.

  4. Preheat a grill to medium-high heat. Place the tomato skewers on the grill grate, cover, and cook for 2 to 4 minutes, turning occasionally, until the tomatoes are slightly softened.

  5. Place the beef skewers on the grill alongside or after the tomatoes. Cover and grill for 9 to 11 minutes for medium doneness, turning once halfway through cooking. The internal temperature of the beef should reach 145°F for medium-rare or 160°F for medium doneness.

  6. Remove all skewers from the grill and arrange on a serving platter. Drizzle the reserved mojo sauce over the beef and vegetable skewers before serving.

Mojo Beef Kabobs hits the sweet spot for Charlotte weeknight cooking: every ingredient lands at Harris Teeter, Food Lion, Publix, or Walmart without a special trip, and the marinade is honest, flavor-forward seasoning rather than a long list of exotic items. At roughly $3 to $4 per serving for beef, citrus, and vegetables, the cost is reasonable for a grilled dinner. The stated 40 minutes is honest if you account for marinating time separately—the hands-on work is about 15 minutes—so budget an hour total if you want real flavor development. The real caveat is that these are best eaten fresh off the grill the same night; leftovers reheat but lose their char and juice.
