Ingredients
8 oz. cream cheese, softened
8 Tbsp. unsalted butter, softened
7⅓ cups powdered sugar
2⅓ cups sweetened flake coconut
1½ tsp. vanilla extract
pinch Pinch kosher salt
¼ cup ground cinnamon, for rolling
Directions
In a large mixing bowl, combine the softened cream cheese and softened butter. Beat together with an electric mixer on medium speed until the mixture is light, fluffy, and well combined, about 2–3 minutes.
Gradually add the powdered sugar to the cream cheese mixture in batches, beating on low speed after each addition to prevent clouds of sugar. Continue beating until all the sugar is incorporated and the mixture is smooth and creamy.
Stir in the vanilla extract and kosher salt until evenly distributed throughout the mixture.
Fold in the sweetened flake coconut by hand using a spatula or wooden spoon until it is completely incorporated and the dough holds together.
Place the ground cinnamon in a shallow dish or plate. Working with about 1 Tbsp. of the mixture at a time, roll the dough between your palms into a small oblong shape, resembling a tiny potato.
Immediately roll each formed piece in the ground cinnamon, turning to coat all sides evenly. Place the finished confections on a parchment-lined baking sheet.
Refrigerate the Irish Potatoes for at least 30 minutes before serving to allow them to firm up slightly. Store in an airtight container in the refrigerator for up to 2 weeks.
