Ingredients

1 tablespoon extra-virgin olive oil

½ cup chopped onion

1 medium medium green bell pepper, chopped

1 lb lean ground beef

3 cup bite-size cauliflower florets

3 clove minced garlic

2 tablespoon chili powder

2 teaspoon ground cumin

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon ground chipotle

15 oz no-salt-added petite-diced tomatoes

2 cup shredded extra-sharp Cheddar cheese

⅓ cup sliced pickled jalapeños

Directions

  1. Preheat your oven to 375°F. Heat the olive oil in a large cast-iron skillet or oven-safe baking dish over medium-high heat.

  2. Add the chopped onion and green bell pepper to the hot oil, and sauté for 3–4 minutes until softened and fragrant.

  3. Add the ground beef to the skillet and cook, breaking it apart with a spoon, for 5–6 minutes until no pink remains and the internal temperature reaches 160°F.

  4. Stir in the minced garlic and cook for 30 seconds until aromatic.

  5. Add the chili powder, ground cumin, dried oregano, salt, and ground chipotle. Stir well and cook for 1 minute to bloom the spices.

  6. Pour in the canned diced tomatoes (with their juices) and add the cauliflower florets. Stir to combine, then spread evenly in the skillet.

  7. Distribute the shredded Cheddar cheese evenly over the top, then scatter the sliced pickled jalapeños over the cheese.

  8. Transfer the skillet to the preheated oven (or cover with foil if not oven-safe) and bake for 8–10 minutes until the cheese is melted and bubbly.

  9. Remove from the oven and let rest for 2 minutes before serving.

Ground beef, cauliflower, cheddar, and pantry spices are all standard finds at Harris Teeter, Food Lion, Publix, Walmart, ALDI, or Kroger—no special stops needed. The 30-minute stated time is honest for weeknight cooking, though you'll want 10 minutes of chopping onion, pepper, and garlic before the cooking starts; expect 40 minutes total from counter to oven. At roughly $2.25 per serving (ground beef around $5 per pound and a head of cauliflower near $3), this is genuinely economical and reheats well, making it a strong choice for weeknight dinner or next-day lunch. The one caveat: jalapeños and chipotle push this toward mild-to-medium heat rather than family-table mild, so taste as you build if you have younger eaters.
