Ingredients

⅓ cup sugar

¼ cup water

¼ cup fresh lime juice

2 cups chilled seltzer water

¼ cup chilled pineapple juice

1 cup fresh blackberries

8 fresh strawberries, hulled and sliced

Directions

  1. In a small saucepan, combine sugar and water over medium heat. Stir constantly until the sugar dissolves completely, about 2 minutes. Remove from heat and let the simple syrup cool to room temperature, about 5 minutes.

  2. Once the simple syrup has cooled, stir in the fresh lime juice.

  3. Divide the cooled syrup mixture evenly between two tall glasses filled with ice.

  4. Add half of the chilled pineapple juice to each glass and stir well to combine.

  5. Top each glass with 1 cup of chilled seltzer water, pouring slowly to preserve the carbonation.

  6. Divide the fresh blackberries and sliced strawberries equally between the two drinks, allowing them to float on top and infuse flavor.

  7. Stir gently, taste for sweetness and adjust if desired, then serve immediately.

This beverage is straightforward to assemble from ingredients stocked at every Charlotte chain—pineapple and berry juices are standard, fresh berries appear year-round, and seltzer is ubiquitous. The 20-minute estimate is honest if it includes chilling time, though mixing takes under five minutes. Cost per serving lands around two dollars, driven entirely by the fresh berries, which is reasonable for a summery drink. The main drawback is it's strictly a same-night recipe with no practical leftovers, so it works only for immediate consumption.
