Ingredients

2 sourdough slices

1/2 ripe medium Hass avocado

pinch a pinch of paprika

12 leaves a handful of fresh spinach, about 12 leaves

8 cucumber slices, with peel

2 slices of smoked salmon

Directions

  1. Toast the sourdough slices until golden and crispy on the outside, about 2–3 minutes per side or until they reach your desired level of crispness.

  2. While the bread toasts, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until roughly combined, leaving some small chunks for texture. Season with a pinch of paprika and stir gently.

  3. Remove the toasted bread from the heat and divide the mashed avocado between the two slices, spreading it evenly across each piece.

  4. Layer the fresh spinach leaves evenly over the avocado on each toast slice.

  5. Arrange 4 cucumber slices on top of the spinach on each toast, overlapping slightly if desired.

  6. Top each piece with one slice of smoked salmon, draping it loosely over the cucumbers.

  7. Serve immediately while the toast is still warm and the flavors are fresh.

Smoked salmon and avocado toast is easy and genuinely good, but the smoked salmon is the hitch: it is not a regular stock item at Harris Teeter, Food Lion, Kroger, Walmart, or ALDI, and you will need to make a stop at Publix or a specialty market like Harris Teeter's seafood counter or Earth Fare to source it reliably. The stated 10 minutes is honest for assembly once ingredients are on hand, though you should budget time to slice the cucumber and halve the avocado. At roughly $5 to $6 per serving, the smoked salmon drives cost, which makes this a special lunch rather than weeknight routine. The dish does not reheat well, so plan to eat it same-day; spinach wilts quickly under warm toast and smoked salmon hardens when warmed. Avocado and spinach are reliably available at all Charlotte chains, and sourdough bread is standard. This is best for two people eating together, not for meal prep or a crowd.
