1½ pound Fresh or frozen hulled strawberries, quartered
3 tablespoon Granulated sugar
1 tablespoon Lemon juice
Directions
Place the quartered strawberries and granulated sugar in a medium saucepan over medium-high heat.
Stir gently as the mixture heats, allowing the sugar to dissolve and the strawberries to release their juices, about 3–4 minutes.
Once the mixture begins to simmer, reduce the heat to medium and continue cooking uncovered, stirring occasionally, for 5–7 minutes until the berries soften and the liquid thickens slightly.
Remove from heat and stir in the fresh lemon juice, which will brighten the flavor and provide a subtle tang.
Allow the compote to cool for a few minutes; it will continue to thicken as it cools. Serve warm or transfer to a container and refrigerate until ready to use.
