Garlicky Roast Chicken

Ingredients
3 tablespoons Unsalted butter, softened
1 3½-pound Whole chicken
Salt
Freshly ground black pepper
24 cloves from 2 heads Garlic cloves, separated but unpeeled
3 tablespoons Water
Directions
Preheat your oven to 450°F (230°C). Pat the chicken dry inside and out with paper towels, removing any excess moisture.
Rub the softened butter all over the chicken, under the skin, and inside the cavity. Season generously inside and out with salt and freshly ground black pepper.
Scatter the unpeeled garlic cloves into the roasting pan and place the seasoned chicken breast-side up on top of them. Pour the water into the bottom of the pan around the chicken.
Roast for 60 to 75 minutes, until the skin is golden brown and an instant-read thermometer inserted into the thickest part of the thigh (without touching bone) reads 165°F. The juices should run clear when the thigh is pierced.
Remove from the oven and let rest for 5 to 10 minutes before carving. Serve with the roasted garlic cloves, squeezing the soft garlic paste from their skins as a condiment alongside the chicken.
