Ingredients
4 boneless skinless chicken breasts (4 oz each)
2 oz cream cheese, softened
1/8 cup mayonnaise
2 teaspoons savory garlic spread
1/4 cup minced marinated artichokes
1/8 cup minced roasted red bell peppers
1/4 cup shredded mozzarella cheese
1 loaf focaccia bread, sliced
Directions
Preheat grill to medium-high heat. Pat the chicken breasts dry and season lightly with salt and pepper if desired. Place chicken breasts on the grill and cook for 5-7 minutes per side until fully cooked through (internal temperature of 165°F). Do not move chicken while cooking to develop a nice sear.
While the chicken is cooking, combine the softened cream cheese and mayonnaise in a small bowl and mix until smooth. Fold in the mozzarella cheese, minced artichokes, garlic spread, and minced roasted red peppers until evenly combined.
Once the chicken is cooked through, reduce grill heat to low. Top each chicken breast with an equal portion of the artichoke-cream cheese mixture. Close the grill cover and cook for approximately 5 minutes to allow the cheese mixture to melt and warm through completely.
Transfer the topped chicken breasts to sliced focaccia bread, sandwich-style. Serve warm and enjoy.
Comments
This sandwich hits the Charlotte sweet spot: chicken, artichokes, and mozzarella are all standard at Harris Teeter, Food Lion, and Walmart, with no forced detours. The cost per serving lands around $3–$3.50 when you use store-brand cream cheese and mayo, driven mainly by the fresh chicken breast. The stated 30 minutes is honest if you buy pre-made garlic spread and jarred artichokes, though fresh artichokes would add 15 minutes of prep. It's a solid weeknight dinner for four and reheats decently if you store the fillings separately from the bread. One caveat: focaccia can dry out on the second day, so plan to eat this the same night or toast leftovers rather than microwave them.
