1-2 tablespoons sunflower oil
200g beef stir-fry strips
200g tenderstem broccoli
1 onion, sliced
1 garlic clove, sliced
2 tablespoons oyster sauce
125 ml water
1 splash water (for broccoli)
Directions
Place a wok or large skillet over high heat and allow it to get very hot until wisps of smoke just begin to appear. Carefully pour in the sunflower oil and swirl to coat the bottom. Add the beef stir-fry strips and stir constantly for about 2 minutes until the beef is browned on the outside and cooked to an internal temperature of 145°F. Transfer the beef and any pan juices to a clean plate and set aside.
Return the wok to medium-high heat. Add the tenderstem broccoli with a splash of water. Stir-fry for 3-4 minutes, stirring occasionally, until the broccoli becomes bright green and tender-crisp.
Add the sliced onion to the wok and stir-fry for 1 minute. Then add the garlic slices and cook for another minute, stirring constantly until fragrant.
Pour the oyster sauce and 125 ml of water into the wok. Bring the mixture to a boil, then reduce the heat to medium and simmer for 2-3 minutes, stirring occasionally, until the sauce thickens and becomes glossy and reduced.
Return the cooked beef and all accumulated juices from the plate to the wok. Toss everything together for 30 seconds until the beef is heated through and well coated in the sauce. Divide among serving bowls and serve immediately.
