Soft and tender cookies made with whole wheat or gluten-free flour, bound together with a touch of coconut oil and sweetened with pure maple syrup. Fresh strawberries add natural flavor and texture throughout. These cookies are best enjoyed slightly warm or at room temperature with a cold glass of milk.

Ingredients

1¼ cup whole wheat or gluten-free flour

¾ tsp baking powder

⅛ tsp salt

2 tbsp coconut oil, melted

1 large large egg, room temperature

1 tsp vanilla extract

½ cup pure maple syrup

½ cup fresh or frozen and thawed strawberries, diced

Directions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set this dry mixture aside. In a separate bowl, whisk the melted coconut oil, egg, and vanilla extract until well combined. Stir the maple syrup into the wet ingredients until fully incorporated.

  2. Pour the wet mixture into the bowl with the dry ingredients and stir until just combined—do not overmix. Gently fold in the diced strawberries with as few strokes as possible to keep them intact. Cover the dough and refrigerate for at least 30 minutes.

  3. Preheat your oven to 325°F. Line a baking sheet with parchment paper or a silicone mat. Using a cookie scoop or spoon, drop rounded portions of dough onto the prepared sheet, spacing them about 2 inches apart. If the dough has only chilled for 30 minutes, shape each cookie so it is as tall as it is wide to minimize spreading.

  4. Bake for 13 to 16 minutes, until the edges are set but the centers still appear slightly underbaked. Allow the cookies to cool on the baking sheet for at least 15 minutes to firm up. If the cookies seem fragile when you attempt to move them, let them rest on the sheet until they have cooled completely before transferring to a wire rack.

All ingredients are standard Charlotte-area supermarket stock—flour, baking powder, salt, coconut oil, and eggs at Walmart or Harris Teeter, vanilla and maple syrup in the baking aisle, and fresh strawberries year-round at any chain. Cost per serving lands around $0.60–$0.75, driven mainly by the maple syrup and fresh fruit, both reasonable for a cookie. The stated 45 minutes is honest; mixing and baking take that time, though the cookies are delicate and do not reheat well, making them a same-day treat best enjoyed fresh or within hours. These are straightforward enough for a weeknight baker but fussy about texture—strawberries release moisture, so watch for overbaking and eat them soon after they cool.
