4 cups baby arugula or fresh spinach

1 cup crumbled feta cheese

4 flour tortillas (12-inch), white or whole wheat

1/2 cup kalamata olives, chopped

2 teaspoons fresh lemon juice

1 teaspoon fresh lemon zest

1/4 teaspoon black pepper

1/2 cup plain Greek yogurt

1/2 cup jarred roasted red peppers, patted dry and chopped

1/2 teaspoon salt

4 cups cooked and shredded chicken

Directions

  1. In a large bowl, combine the shredded chicken, crumbled feta cheese, Greek yogurt, roasted red peppers, chopped olives, lemon zest, lemon juice, salt, and black pepper. Mix until all ingredients are evenly distributed throughout the filling.

  2. Lay out one tortilla and distribute a portion of the fresh arugula or spinach across the entire surface, leaving a small border around the edges.

  3. Spoon one-quarter of the chicken mixture down the center of the tortilla in a line, then roll the tortilla tightly from one side to the other, tucking in the sides as you roll to keep the filling secure.

  4. Repeat steps 2 and 3 with the remaining three tortillas and filling.

  5. Using a serrated knife, carefully cut each wrap in half at a slight diagonal to expose the layers of filling. Serve immediately.
