Ingredients
1/2 cup creamy peanut butter
1/3 cup honey
1 teaspoon vanilla extract
1/4 teaspoon sea salt
3/4 cup old-fashioned oats
1/4 cup chopped raw almonds
1/4 cup dried cranberries
1/2 cup semi-sweet chocolate chips
1/4 cup flax seed meal
1 Tablespoon chia seeds (optional)
Directions
In a large mixing bowl, combine the peanut butter, honey, vanilla extract, and sea salt. Stir until the mixture is smooth and creamy.
Add the old-fashioned oats, chopped almonds, dried cranberries, semi-sweet chocolate chips, flax seed meal, and chia seeds (if using) to the bowl. Mix thoroughly until all ingredients are evenly distributed throughout the mixture.
Using a small cookie scoop or spoon, portion the mixture into bite-sized mounds and place them onto a parchment-lined baking sheet.
Roll each mound between your hands to form a compact ball. Repeat until all mixture is shaped.
Place the baking sheet in the refrigerator and chill for at least 30 minutes to allow the balls to firm up and set.
Transfer the chilled energy balls to an airtight container and store in the refrigerator for up to one week.
