1 box brownie mix

2 large eggs

1/2 cup vegetable oil

1/4 cup Baileys Original Irish Cream

1/2 cup butter, softened

3 cups powdered sugar, divided

1/4 cup Baileys Original Irish Cream

1/2 teaspoon mint extract

pinch Pinch of kosher salt

Green food coloring

1/2 cup chocolate chips, melted

Directions

  1. Preheat your oven to 350°F. Lightly coat a 9x13 inch baking pan with cooking spray to prevent sticking.

  2. In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and 1/4 cup Baileys Irish Cream. Stir until just combined and no dry streaks remain.

  3. Pour the brownie batter into the prepared pan and spread evenly. Bake for 23-25 minutes, until a toothpick inserted into the center comes out with just a few moist crumbs. Do not overbake. Allow the brownies to cool completely in the pan.

  4. While the brownies cool, prepare the mint frosting by beating the softened butter in a medium bowl until light and fluffy, about 1-2 minutes.

  5. Gradually add the powdered sugar to the butter, 1 cup at a time, beating well after each addition. The frosting will be thick and crumbly at first.

  6. Add the remaining 1/4 cup Baileys Irish Cream, mint extract, salt, and a few drops of green food coloring. Beat until the frosting is smooth, creamy, and spreadable, adding more coloring if desired.

  7. Once the brownies are completely cool, spread the mint frosting evenly over the top using a spatula or knife.

  8. Drizzle the melted chocolate chips in thin lines across the frosted brownies to create a decorative pattern. Allow the chocolate to set for a few minutes.

  9. Cut into 16 equal squares and serve. Store in an airtight container at room temperature for up to 3 days.
