2 medium potatoes, sliced
2 cups carrots, sliced
1/2 cup onion, sliced
1 pound 90% lean ground beef, browned and drained
1 1/2 cups green beans
1 can low-sodium tomato soup
1/4 teaspoon black pepper
Cooking spray or oil for greasing
Directions
Wash your hands thoroughly with soap and water before beginning food preparation.
Preheat your oven to 350 degrees Fahrenheit.
Lightly coat a 9x13-inch baking dish with cooking spray or a thin layer of oil.
In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks, until no pink remains. This should take about 5-7 minutes. Drain off any excess fat and set aside.
Begin layering in the prepared baking dish: first, arrange the sliced potatoes as the bottom layer.
Layer the sliced carrots over the potatoes.
Layer the sliced onions over the carrots.
Spread the browned and drained ground beef evenly over the onions.
Layer the green beans over the beef.
Pour the entire can of tomato soup evenly over the top layer. Sprinkle the black pepper over the soup.
Cover the baking dish tightly with foil and place in the preheated oven.
Bake covered for 45 minutes, or until the potatoes and vegetables are tender when pierced with a fork and everything is heated through to 165 degrees Fahrenheit (use a food thermometer to verify the internal temperature at the center).
Remove the foil and bake uncovered for an additional 15 minutes until the top is lightly browned.
Remove from the oven and let rest for 5 minutes before serving.
