6 cups Golden Grahams cereal

2 tablespoons coconut oil

3 cups mini marshmallows

12 ounces semi-sweet chocolate chips

Directions

  1. Line a 9 by 13 inch baking dish with parchment paper. In a large microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave on high for 2 minutes, stirring every 30 seconds until fully melted. If needed, continue microwaving in 15 to 20 second intervals, stirring between each interval, until no lumps remain.

  2. Add 1 cup of the mini marshmallows to the melted chocolate and stir until the marshmallows are completely incorporated and the mixture is smooth.

  3. Fold in the remaining 2 cups of mini marshmallows and the Golden Grahams cereal, stirring until all pieces are evenly coated with the chocolate mixture.

  4. Pour the mixture into the prepared baking dish. Using a spatula lightly coated with cooking spray, press and flatten the mixture firmly and evenly across the bottom of the dish.

  5. Place the dish in the refrigerator for 2 to 4 hours, or until the chocolate has completely set and the bars are firm to the touch.

  6. Remove from the refrigerator and cut into 24 bars using a sharp knife. Store the bars in an airtight container in the refrigerator.
