12 jumbo chicken wings
280 ml buttermilk
Salt to taste
Directions
In a large bowl, combine the chicken wings with the buttermilk and a pinch of salt. Toss until the wings are evenly coated. Cover the bowl with plastic wrap and refrigerate overnight to allow the marinade to tenderize the meat.
Preheat the oven to 200°C (180°C fan/gas 6). Line a baking tray with parchment paper. Remove the wings from the refrigerator. One at a time, lift each wing from the buttermilk, shake off excess liquid, and place on the prepared tray in a single layer. Roast for 35 minutes until the wings are golden brown and the internal temperature reaches 165°F.
Remove the wings from the oven. Generously brush all sides with your preferred glaze (hot sauce, honey, or spice-based glaze). Reduce the oven temperature to 180°C (160°C fan/gas 4). Return the wings to the oven and cook for an additional 15 minutes until the glaze becomes sticky and begins to caramelize on the edges.
Remove the wings from the oven and let them rest for 1-2 minutes. Transfer to a serving plate and serve immediately, optionally accompanied by a cooling dip such as blue cheese dressing or ranch.
