Pupusas Revueltas are traditional Salvadoran filled corn flatbreads featuring a savory mixture of seasoned ground chicken, vegetables, cheese, and aromatics. The ground chicken is cooked with onion, garlic, green pepper, and tomato to create a flavorful filling, then combined with melted mozzarella cheese. This filling is stuffed inside handmade masa dough circles and pan-fried until crispy and golden on both sides. These delicious pupusas are best served hot and make for a satisfying main dish.

Ingredients
16 ounces Ground chicken breast
1 tablespoon Vegetable oil
½ pound Part-skim mozzarella cheese, grated
½ Small yellow onion, finely diced
1 clove Garlic clove, minced
1 Medium green bell pepper, seeded and minced
1 Small tomato, finely chopped
½ teaspoon Salt
5 cups Instant masa harina (corn flour)
6 cups Water
Directions
Wash your hands thoroughly with soap and water before beginning.
Heat the vegetable oil in a non-stick skillet over low to medium heat.
Add the ground chicken breast to the skillet and cook, stirring frequently to break up the meat and prevent sticking, until the chicken is no longer pink and reaches an internal temperature of 165°F (approximately 5-7 minutes).
Add the diced onion, minced garlic, minced green pepper, and chopped tomato to the skillet with the cooked chicken.
Stir the mixture well and cook until all vegetables are tender and flavors are blended, about 3-4 minutes.
Remove the skillet from heat and transfer the chicken and vegetable mixture to a shallow dish. Refrigerate until completely cooled, about 15-20 minutes.
While the chicken mixture cools, place the masa harina in a large mixing bowl. Gradually add water, stirring constantly, until the dough reaches a stiff, tortilla-like consistency.
Once the chicken mixture has cooled completely, fold in the grated mozzarella cheese and the salt.
Divide the masa dough into 24 equal portions (about the size of golf balls).
Working with one portion at a time, roll a dough ball between your hands, then flatten it into a 1/2-inch-thick circle.
Place about 1 tablespoon of the chicken filling in the center of each dough circle, then carefully fold the edges toward the center to seal the filling inside the dough.
Gently flatten the sealed dough ball again until it forms a round, flat pupusa about 1/2 inch thick.
Heat an iron skillet or griddle over high heat until very hot. Working in batches if needed, place the pupusas on the hot skillet and cook for 2-3 minutes per side until golden brown and crispy.
Transfer the cooked pupusas to a serving plate and serve hot.
