Ingredients
250 grams Ground chicken
3 cloves Garlic cloves, minced
1 medium Yellow onion, divided (¾ sliced lengthwise, ¼ diced)
1 medium Fresh jalapeño, seeds removed and sliced lengthwise
2 tablespoons Olive oil
Salt and black pepper to taste
8 shells Corn taco shells
8 tortillas Flour tortillas
Shredded lettuce
Diced tomatoes
Sour cream
Shredded cheese
Lime wedges for serving
Directions
Heat the olive oil in a large nonstick skillet over medium heat. Once shimmering, add the sliced onions, minced garlic, and sliced jalapeño. Cook for 5–6 minutes, stirring occasionally, until the onions become translucent and slightly softened.
Add the ground chicken to the pan along with a pinch of salt and pepper. Break up the meat with a spoon as it cooks, stirring frequently to ensure even browning. Continue cooking for 8–10 minutes until the chicken is completely cooked through (internal temperature 165°F/74°C) and no pink remains, with the meat appearing browned and slightly caramelized.
While the chicken finishes cooking, preheat your oven to 350°F (175°C). Arrange the corn taco shells on a baking sheet and warm them for 4–5 minutes until they are fully heated through and crispy.
Heat a dry skillet or griddle over medium heat. Warm each flour tortilla for about 30 seconds per side until soft, pliable, and warmed through.
To build each taco, place a warm corn shell inside each warm flour tortilla to create a double-shell structure for extra sturdiness.
Spoon the cooked chicken mixture evenly into each double-shell taco. Top with shredded lettuce, diced tomatoes, a dollop of sour cream, and shredded cheese according to taste and preference.
Serve the tacos immediately while they are still warm, with lime wedges on the side for squeezing over the top to add brightness and acidity.
Comments
Every ingredient on this list is routine stock at Harris Teeter, Food Lion, Kroger, or Walmart in Charlotte, with no special stops required. The stated 35 minutes is honest for skilled prep, though a home cook should budget 45 to account for dicing the jalapeño and onion and cooking chicken through properly. Cost per serving lands around $3 to $3.50, driven mainly by chicken breast prices, which makes this a weeknight-friendly option. The dish reheats poorly—tacos are best eaten fresh—but the components store separately, and leftover chicken works in other meals. Napa cabbage is conspicuously absent from a "Napa-style" taco recipe, which is the only creative disappointment here; the dish is straightforward Tex-Mex rather than elevated.
