2 tablespoons olive oil
1 medium onion, finely chopped
1 can (4 ounces) green chilies, drained
2 cans (15.5 ounces each) low-sodium Great Northern beans
1 can (14.5 ounces) low-sodium chicken broth
2 teaspoons garlic powder
1/2 teaspoon black pepper
2 teaspoons ground cumin
1 1/2 cups cooked chicken, cubed
1/2 cup shredded mozzarella cheese
Fresh parsley for garnish (optional)
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Heat the olive oil in a large saucepan over medium heat until shimmering.
Add the finely chopped onion to the hot oil and cook, stirring occasionally, until softened and translucent, about 4-5 minutes.
Stir in the drained green chilies, Great Northern beans with their liquid, chicken broth, garlic powder, black pepper, and ground cumin. Mix well to combine.
Add the cubed cooked chicken to the pot and stir to incorporate evenly throughout.
Increase the heat to medium-high and bring the chili to a rolling boil.
Reduce heat to low and simmer uncovered for 10-15 minutes, stirring occasionally, until the flavors meld and the consistency reaches your desired thickness.
Ladle the hot chili into serving bowls and top each with a generous handful of shredded mozzarella cheese.
Garnish with fresh chopped parsley if desired, and serve immediately.
