Ingredients

1 cup fresh or frozen vegetables, cut into bite-sized pieces

1/2 cup low-sodium chicken broth

1 cup cooked brown rice

1/2 can (about 7.75 ounces) low-sodium canned kidney beans, drained and rinsed

1 teaspoon fresh dill weed, snipped, or 1/2 teaspoon dried dill (optional)

Black pepper to taste (optional)

Directions

  1. Place the cut vegetables and chicken broth in a microwave-safe dish with a cover.

  2. Microwave on high power, stirring gently every 2 to 3 minutes, until the vegetables are nearly tender, about 6 to 8 minutes.

  3. Add the cooked brown rice, drained kidney beans, dill weed, and black pepper to the dish.
