Ingredients

8 slices White bread

4 Tbsp Unsalted butter, melted

8½ oz Sharp cheddar cheese, coarsely grated

1 Large tomato, thinly sliced

½ Large white onion, very thinly sliced

Kosher salt

Freshly ground black pepper

3 Tbsp Sweet-and-sour chutney (preferably Mrs. Ball's)

Directions

  1. Preheat your grill or griddle over medium heat for several minutes until evenly hot.

  2. Lay out all 8 slices of bread on a work surface. Lightly brush one side of each slice with melted butter.

  3. Arrange 4 slices of bread with the buttered side down on your work surface. Spread approximately ¾ tablespoon of sweet-and-sour chutney on the unbuttered side of each slice.

  4. Distribute half of the grated cheddar cheese evenly over the chutney on each slice, using about ¼ cup per sandwich.

  5. Layer the thinly sliced tomato over the cheese on each sandwich, dividing the slices evenly. Season lightly with kosher salt and freshly ground black pepper.

  6. Top the tomato with the thinly sliced white onion, distributing evenly across the 4 sandwiches.

  7. Sprinkle the remaining grated cheddar cheese over the onion on each sandwich, using about ¼ cup per sandwich.

  8. Place the remaining 4 slices of bread, buttered side up, on top of each sandwich to complete the assembly.

  9. Carefully transfer each sandwich to the preheated grill or griddle. Grill for 4–5 minutes until the bottom is golden brown and crispy, pressing gently with a spatula occasionally to ensure even contact with the heat.

  10. Flip each sandwich carefully and grill the second side for another 3–4 minutes until golden brown, the cheese is fully melted, and the interior is heated through.

  11. Remove the sandwiches from the grill, let cool for a minute, and serve immediately while hot and crispy.
