Ingredients
1 medium butternut squash, peeled, seeded, and diced into large pieces
1 large sweet potato, peeled and diced into large pieces
3 medium potatoes, peeled and diced into medium pieces
2 medium onions, chopped
2 large carrots, sliced
2 teaspoons minced garlic
4.25 to 8.5 cups vegetable or chicken stock, divided based on desired consistency
Directions
Prepare all vegetables: peel and dice the butternut squash into large chunks, peel and dice the sweet potato into large pieces, peel and dice the regular potatoes into medium-sized pieces, chop the onions, slice the carrots, and mince the garlic. Set aside.
Transfer the prepared butternut squash, sweet potato, regular potatoes, onions, and carrots to your slow cooker.
Add the minced garlic and stir gently to distribute it throughout the vegetables.
Pour the vegetable or chicken stock over the vegetables. For a thicker, heartier soup, use 4.25 cups of stock; for a lighter, more brothish consistency, use 8.5 cups. You may also use any amount in between depending on your preference.
Cover the slow cooker and cook on low heat for 7 to 8 hours, or on high heat for 4 to 5 hours, until all the vegetables are very tender and easily break apart when pierced with a fork.
Stir the soup well to break down some of the vegetables, which will naturally thicken the broth. You can leave it slightly chunky for a rustic texture, or use an immersion blender to blend some or all of the soup until you reach your desired consistency.
Taste and adjust seasoning if needed. Serve hot, ladled into bowls, and enjoy immediately.
