Ingredients

1 (15-ounce) can white beans, rinsed and drained

2 small heads broccoli, cut into small florets (about 4–6 cups)

1 package (about 1 pound) lasagna noodles, preferably whole wheat

1 tablespoon olive oil

5 cloves garlic, minced

1 medium yellow onion, diced

1 (24-ounce) jar marinara or spaghetti sauce

Red pepper flakes, to taste

Salt and black pepper, to taste

Directions

  1. Cut the broccoli florets into small, bite-sized pieces. Bring a large pot of salted water to a rolling boil. Break the lasagna noodles into roughly 2–3 inch pieces and add them to the boiling water. Cook according to the package directions.

  2. When the noodles are almost tender, add the broccoli pieces to the pot and cook for 2–3 minutes until the broccoli is bright green and tender-crisp but still holds its shape.

  3. Drain the noodles and broccoli in a colander and set aside.

  4. Finely mince the garlic cloves and dice the yellow onion.

  5. Heat the olive oil in a large nonstick skillet over medium-high heat until shimmering.

  6. Add the minced garlic and diced onion to the skillet and sauté for 2–3 minutes, stirring occasionally, until the onion is soft and both ingredients are fragrant.

  7. Add the rinsed and drained white beans to the skillet. Season generously with salt, black pepper, and red pepper flakes to your liking. Cook for 2–3 minutes, stirring gently, until the beans are heated through.

  8. Transfer the warm bean mixture to the pot with the drained noodles and broccoli.

  9. Pour the marinara sauce over the noodle and bean mixture and stir well to combine all ingredients evenly.

  10. Place the pot over medium heat and cook, stirring occasionally, for 3–5 minutes until the entire dish is heated through. Taste and adjust seasonings as needed. Serve warm.

All ingredients are stocked at any major Charlotte chain—white beans are canned, broccoli is year-round produce, and pasta and jarred marinara are pantry staples. The real time is closer to 45 minutes once you account for browning aromatics, cooking broccoli until tender, simmering the filling, and the full lasagna noodle cooking time, so the stated 35 minutes undershoots honest prep. Cost per serving lands around $2 to $2.50 depending on marinara brand, making this weeknight-friendly. It's a forgiving one-pot dish that reheats well and feeds a family without fussiness, though it lacks the seasonal NC relevance of a collard or sweet potato version.
