Ingredients
1/4 cup butter
2 cups white sugar
5 tablespoons unsweetened cocoa powder
1/4 cup all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
4 egg yolks
4 egg whites
1 unbaked 9-inch pie shell
Directions
Preheat the oven to 350°F (175°C).
In a saucepan, combine the sugar, cocoa powder, and flour. Whisk together until well blended with no lumps.
Gradually pour in the evaporated milk while stirring constantly. Add the vanilla extract and mix until smooth.
In a small bowl, beat the egg yolks until light in color, then stir them into the chocolate mixture in the saucepan until fully incorporated.
Add the butter to the pan and heat over medium heat, stirring constantly, until the butter is completely melted and the filling is smooth. The internal temperature should reach 160°F to ensure food safety.
Pour the warm chocolate filling into the unbaked pie shell and place in the preheated 350°F oven.
Bake for 35 to 40 minutes, until the center is barely set and the pie no longer jiggles excessively when gently shaken. A small amount of movement is normal—do not overbake.
While the pie bakes, beat the egg whites in a clean, dry bowl until soft peaks form.
Gradually add 1/4 cup sugar to the beaten egg whites while continuing to beat. Beat until stiff peaks form and the meringue is glossy.
Remove the pie from the oven. Spread or pipe the meringue over the warm filling, making sure to seal it to the edges of the crust to prevent shrinking.
Return the pie to the oven and bake for an additional 8 to 10 minutes, until the meringue is lightly golden on the peaks.
Remove from the oven and let cool to room temperature, then refrigerate before serving.
