Ingredients
2 medium limes
1 packed cup fresh cilantro leaves and tender stems
1/2 cup plain Greek yogurt
2 teaspoons honey
1 teaspoon ground coriander
1 teaspoon kosher salt
1 small clove garlic, minced
1/4 cup extra-virgin olive oil
Directions
Zest both limes and set the zest aside. Cut the limes in half and juice them into a small bowl, straining out any seeds.
Roughly chop the cilantro leaves and tender stems, discarding any thick, woody stems.
In a food processor or blender, combine the chopped cilantro, minced garlic, lime zest, and reserved lime juice. Pulse until the cilantro is finely chopped and the mixture becomes fragrant.
Add the Greek yogurt, honey, ground coriander, and kosher salt to the processor. Pulse until well combined and mostly smooth, with small flecks of cilantro visible.
With the processor running or while stirring by hand, slowly drizzle in the extra-virgin olive oil until the dressing reaches your desired consistency. It should be creamy and pourable.
Taste and adjust seasoning if needed, adding more salt, lime juice, or honey to balance the flavors. Transfer to a serving bowl or jar and refrigerate until ready to use.
