Ingredients

1 12 oz. can chickpeas, drained and rinsed

1 12 oz. can white beans, drained and rinsed

1/2 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1/2 cup scallions, sliced

2 garlic cloves, minced

2 tablespoons olive oil

1 tablespoon red wine vinegar

2 teaspoons salt

1 teaspoon freshly ground black pepper

Directions

  1. Add the drained and rinsed chickpeas and white beans to a food processor.

  2. Add the fresh parsley, cilantro, sliced scallions, minced garlic, olive oil, red wine vinegar, salt, and pepper.

  3. Pulse the food processor on medium speed, scraping down the sides as needed, until the beans break down and the mixture becomes creamy and well combined, about 1-2 minutes.

  4. If the hummus is thicker than desired, stream in additional olive oil while processing until you reach your preferred consistency.

  5. Transfer to a serving bowl and serve immediately as a dip, spread, or appetizer.
