Ingredients
4 cups watermelon juice (fresh-pressed or store-bought)
⅓ cup fresh lime juice
¼ cup agave syrup
pinch flaky sea salt
lime zest, for garnish
Directions
Pour the watermelon juice into a shallow freezer-safe dish or baking pan. Add the fresh lime juice, agave syrup, and a pinch of flaky sea salt. Stir well to combine all ingredients thoroughly.
Place the pan in the freezer and freeze for 1 hour until the mixture begins to freeze around the edges.
Remove the pan from the freezer and use a fork to scrape the partially frozen mixture, breaking up the ice crystals and moving the frozen portions toward the center.
Return the pan to the freezer for another hour. Repeat the scraping process again.
Continue freezing and scraping every 45 minutes to 1 hour for 3-4 more hours total, until the mixture has a light, flaky, snow-like texture.
Divide the granita between serving bowls or glasses. Top with fresh lime zest and serve immediately while frozen and fluffy.
