Ingredients
2 tablespoons melted butter
4 flour tortillas (gluten-free or spelt)
1 teaspoon ground cinnamon
2 peaches, pitted and sliced
1 cup Greek yogurt, plain or vanilla
2 tablespoons sugar
Directions
Heat your oven to 375°F.
In a small bowl, combine the cinnamon and sugar, stirring until evenly mixed.
Arrange the tortillas on a baking sheet. Brush one side of each tortilla generously with melted butter, then sprinkle the cinnamon-sugar mixture evenly over the buttered side. Flip each tortilla and repeat with the remaining butter and cinnamon-sugar mixture on the other side.
Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, until the edges are golden and crispy while the centers remain slightly soft.
Remove from the oven and allow the tortillas to cool for 5 minutes. Spread 1/4 cup of yogurt on each tortilla, top with half a sliced peach, fold gently, and serve immediately.
Comments
Every ingredient is standard stock at any Charlotte grocery chain—butter, flour tortillas, cinnamon, peaches, Greek yogurt, and sugar cost roughly $12–14 total, or about $3–3.50 per serving, which is reasonable for a breakfast dish. The 45-minute stated time appears honest for warming tortillas, preparing fruit, and assembling; this is not a bake-and-wait recipe. It's a straightforward no-cook assembly that works well for a family breakfast or weekend brunch, though it's perishable and doesn't reheat—it's a same-morning dish. Summer peaches align well with the season in the Carolinas, though winter servings would rely on the grocery store's cooler selection rather than local fruit.
