1 tablespoon olive oil

1 medium onion, chopped

1 clove garlic, minced

2 cans (15 ounces each) low-sodium pinto beans, drained and rinsed

1 cup salsa

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Pour the olive oil into a large skillet and heat over medium heat until shimmering, about 1 minute.

  3. Add the chopped onion and minced garlic to the hot oil. Stir frequently and cook until the onion softens and becomes translucent, approximately 5 minutes.

  4. Add the drained and rinsed pinto beans and the salsa to the skillet. Stir well to combine all ingredients.
