Ingredients

1 tablespoon vegetable oil

1 shallot, minced

1 pound large shrimp (about 16 count), peeled and deveined

2 tablespoons Asian chili sauce

1 tablespoon sugar

Coarse salt to taste

Freshly ground black pepper to taste

Directions

  1. Heat the vegetable oil in a large wok or skillet over medium-high heat until shimmering. Add the shrimp in a single layer and season generously with coarse salt and freshly ground pepper. Cook for 1.5 to 2 minutes without stirring, then flip and cook for another 1 to 1.5 minutes until the shrimp are bright pink and have reached an internal temperature of 145°F. Transfer the cooked shrimp to a plate.

  2. In the same skillet over medium heat, add the minced shallot and stir-fry for about 1 minute until softened and fragrant.

  3. Add the Asian chili sauce and sugar to the skillet. Stir well to combine and heat through for about 30 seconds.

  4. Return the cooked shrimp to the skillet and toss constantly for about 1 to 2 minutes until the shrimp are fully coated in the chili glaze and heated through. Taste and adjust seasoning with additional salt and pepper as needed. Serve immediately.
