3/4 cup plus 2 tablespoons all-purpose flour, plus more for work surface
3/4 cup Irish oatmeal
1/2 cup plus 3 tablespoons salted butter, cut into small pieces, room temperature
1/4 cup sugar
Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, combine the all-purpose flour and Irish oatmeal. Stir together until evenly mixed.
Add the room-temperature butter pieces to the flour-oatmeal mixture. Using your fingertips or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse breadcrumbs with some pea-sized pieces of butter remaining.
Sprinkle the sugar over the mixture and stir gently to combine.
Gradually add cold water, a tablespoon at a time, mixing gently with your hands until the dough just comes together. You may need 3-4 tablespoons of water total; use just enough so the dough holds together without becoming wet or sticky.
Turn the dough out onto a lightly floured work surface and gently pat it into a disk about 1/2 inch thick.
Using a sharp knife or biscuit cutter, cut the dough into 8 wedges or rounds of roughly equal size.
Place the biscuits on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 18-22 minutes, until the biscuits are golden brown on the edges and firm to the touch.
Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
